oatmeal brownies

this is a betty crocker recipe... it involves making brownies and oatmeal cookie dough from scratch, then layering the two and getting a delicious little bar that i cant resist! (maybe you could make this recipe with a box of brownie mix and a bag of oatmeal cookie mix too- not sure...)

while im on the subject of brownies... i got a great brownie pan for christmas from my friend kristen (also a lover of everything sweet!) and at first i was a disbeliever, since it is an 'as seen on tv' product- but once i used it, i became a believer! it is great... www.perfectbrownie.com

crust and topping:
2 1/2 cups old fashion oats
3/4 cup flour
3/4 cup brown sugar
1/2 tsp baking soda
3/4 cup melted butter

filling:
4 oz unsweetened baking chocolate
2/3 cup butter
2 cups sugar
1 tsp vanilla
4 eggs
1 1/4 cup flour
1 tsp baking powder
1 tsp salt

1. heat over 350. spray 13x9 pan with cooking spray

2. mix all crust/filling ingredients, reserve 3/4 cup for topping. press remaining mixture in pan. bake 10 minutes. cool 5 minutes.

3. melt choc and 2/3 cup butter in microwave. stir in sugar, vanilla and eggs. stir in remaining dry ingredients.

4. spread filling over cooled crust. sprinkle with reserved oat mixture. bake 30 minutes or until center is set and oat mixture turns golden brown. DO NOT OVERBAKE- and do not use the toothpick trick usually used on brownies!

5. cool completely, about 2 hours. cut into 8 rows by 6 rows. perfect for a large crowd!
